Raspberry & Pecan Muffins for a long hike or cycle

Long walks, hikes and cycles or any activity lasting over an hour will require fuel even if intensity is low or moderate. Maintaining blood sugar levels and hydration will aid both physical and cognitive performance, ensuring that your activity remains enjoyable! My favourite snack to accompany me on long hikes is the raspberry and pecan muffins from Hexis Performance.

Ingredients
200g oats
125g raspberries
75g pecans
1 tsp baking powder
2 bananas
4 tbsp honey
2 tbsp coconut oil
2 tbsp Greek yoghurt
2 eggs
Method
Pre heat the oven to 180 degrees.
Add oats, raspberries and baking powder to a large mixing bowl and mix together.
Blend the banana, eggs, yoghurt, honey and coconut oil together.
Pour the blend over the oat mixture and mix thoroughly.
Spoon out the muffin mixture into a greased tray and place in the pre heated oven to cook for 25 minutes.
Once cooked, remove from the oven and the muffin tray and place on wire rack to cool for 30 minutes.
Enjoy!
