Recipe: High Protein Banana Oat Loaf

Ingredients
160g rolled oats
20g chia seeds
250ml milk of choice
200g Greek yoghurt
2.3g ground cinnamon
2 scoops of vanilla whey protein
2 large bananas
80g blueberries
24g dried Goji berries
Method
Pre-heat oven to 180 degrees and line a loaf tin with baking parchment.
In a large mixing bowl, add the rolled oats, chia seeds, Greek yoghurt, whey protein powder, ground cinnamon and milk.
Use a whisk to stir the mixture together until smooth.
Finely slice one banana and add to oat mixture along with blueberries and Goji berries.
Pour mixture into the loaf tin and place the remaining sliced banana over the top of the mixture.
Bake in the oven for 45 minutes until golden brown and cooked through in the centre.
Serve with drizzle of honey and enjoy!
